Gluten Free Peanut Butter Twix Like Cookie



1 ½ cups Better Batter gluten free flour

¼ cup of gluten free corn starch

½ cup granulated sugar

½ cup butter

2 – 3 tablespoons warm water

In a large bowl combine flour, corn starch and sugar. Cut butter into small pieces and cut it into the flour mixure. Now it is time to get your hands dirty. Add 2 table spoons of water and use your  hands to knead the butter and water in. Add additional water if you need to. (I used 3 tablespoons). Put the dough between 2 pieces of plastic wrap and roll out. Use round cookie cutter to cut out the cookies. Combine the scraps and reroll it. I used a small cutter, use what size you want but you will have to adjust the time. Cook at 325 for 10-12 minutes.

Remove from oven and cool completely before spreading the filling and chocolate on them.

Peanut Butter Filling

4 tablespoons of butter

¾ cup smooth no stir peanut butter

1 tsp vanilla

1 cup of confectioner sugar

Melt butter, combine butter, peanut butter and vanilla. Add sugar. You want it to be a little stiff but spreadable. Spread on cookies once they are cooled.

Chocolate topping

Melt chocolate chips in microwave or over double boiler. If using a microwave make sure to use half power as not to burn the chocolate. Spread over peanut butter and enjoy.
